RED PRAWN CARPACCIO WITH YUZU PEARLS

INGREDIENTS:

• 1 kg of red or white shrimp.

• 3 green lemons or limes.

• 2 stems of tender onion.

• 2 sprigs of parsley.

• 1 bottle of yuzu pearls.

• C / s of extra virgin olive oil.

• C / s of Maldon salt.

PREPARATION:

  1. Clean the shrimp and remove the casing.
  2. On a film, place 5 prawns, cover with another film and crush with a backrest or pastry roll, they must be very thin and round, take to the refrigerator.
  3. Clean the stems of the tender onion and slice finely.
  4. Finely chop the parsley leaves.
  5. Remove the film from the shrimp and plaster.
  6. Season with lemon juice, olive oil, Maldon salt, the leaves of the onion stalks and the zest of the lemon peel, ending with the yuzu pearls.

COMMENTS:

If we use fresh shrimp, the ideal is once we have the shrimp finished in film to freeze.

If they are frozen prawns, it is necessary to cool very well to prepare.
